Aya's Carrot Ginger Dressing

This dressing will put a spring in your step for so many reasons!

My super-fun sister-in-law Aya helped me adapt this dressing from a recipe that we both loved but had some undesirable ingredients. I promise it will be one you’ll come back to over and over again.

Pre- and Probiotics

One benefit of this dressing is that it incorporates the power of miso, which is a PRObiotic-rich fermented paste with a salty flavor, with the PREbiotic goodness of onions.

What is a prebiotic?

Don’t buy those fancy prebiotic supplements, my friends.

Just eat fiber rich vegetables, especially the ones like onions, garlic, leeks, asparagus and artichokes. The good little bacteria in your gut (probiotics) LOVE the fiber-rich carbohydrates of prebiotic-rich foods, and break them down to create short-chain fatty acids (SCFAs).

What are SCFAs and why we should care about them

SCFAs are like little anti-inflammatory messengers in the body.

Here’s what they do:

  • Keep your gut pH normal (which fends off the possible overgrowth of bad bacteria, called SIBO)

  • Release gut-specific satiety hormones (which helps your body recognize fullness, thus controlling your weight)

  • Preserve the integrity of the intestinal lining (which prevents the issue of “Leaky Gut”)

  • Induce rogue cells to undergo apoptosis (which means preventing cancer)

  • Promotes brain health through neuroprotective effects (there’s a lot of neurological tissue in the gut!)

  • Supports immunity (there’s a lot of immune tissue in the gut too!)

Alliums = Anti-Cancer

Alliums (the family that includes onions, garlic, leeks, shallots and chives) are particularly amazing because they have been associated with decreasing cancer risk, in addition to anti-microbial effects. Wow! That means you get DOUBLE DOSE of anti-cancer and anti-microbial effects if you eat alliums since you additionally get those effects from the happy bacteria (probiotics) in your gut! Score!

Ingredients

1 1/2 c carrots, roughly chopped

1/3 c onions, roughly chopped

1 1/2 T fresh ginger

2 T maple syrup

1 T miso

5 T apple cider vinegar

1/4 tsp salt (we like Himalayan or Kosher) to taste

Pepper to taste

1/3 c avocado oil

1 tsp sesame oil


Directions

Combine ingredients in a high speed blender. Add water to thin as desired. Store in glass container for up to a week.
