Gluten-Free Oatmeal Chocolate Chip Cookies Vegan + Naturally Sweetened

These chewy, chocolate-studded oatmeal cookies are inspired by a feel-good recipe from Caroline Reilly of @withgoodcare — and they’ve quickly become a favorite in our wellness kitchen. 

Made with fiber-rich oats, almond flour for a blood sugar-friendly base, and naturally sweetened with maple syrup, these cookies are as functional as they are flavorful. Brain-healthy coconut oil and a dash of antioxidant-rich cinnamon round out the ingredients, supporting everything from hormone balance to cognitive health. Gluten-free, dairy-free, and plant-based, they’re the perfect treat when you're craving something sweet but still want to feel good after!

Bake time 10-13 minutes 

Makes 8-10 cookies

Ingredients

1 ½ cups almond flour
1  cup rolled oats (certified GF if needed)
½ tsp baking soda
½ tsp cinnamon
¼ tsp sea salt
⅓ cup coconut oil, melted
⅓ cup maple syrup
1 tsp vanilla extract
½ cup raisins + chocolate chips

Optional
Sprinkle of sea salt flakes 

Directions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.

  2. In a large bowl, whisk together almond flour, oats, baking soda, cinnamon, and salt.

  3. In another bowl, stir melted coconut oil, maple syrup, and vanilla.

  4. Combine wet and dry ingredients. Fold in raisins and chocolate chips.

  5. Let dough sit 5–10 minutes to soften.

  6. Scoop dough using an ice cream scoop. Flatten gently, making 8-10 cookies.

  7. Bake 10–13 minutes or until golden brown on the edges.

  8. Cool 5 minutes on the pan, then transfer to a wire rack. We recommend freezing leftovers for a future chewy treat.
