Dairy-Free Chocolate Mousse with Tofu: A High-Protein, Guilt-Free Dessert
My workout buddy Annie posted a version of this recipe in her weekly email, and she was right - it fooled my family! No one knew it was made with tofu and didn’t have dairy!
Silken tofu is a great alternative in smoothies or desserts because its texture is seamless and provides a kick of protein alongside a super-neutral taste that can be flavored anyway you’d like. Combined with extra-dark chocolate - the perfect blend of healthy saturated fat, fiber, and a bit of protein - and some additional fiber-rich sweetness from raspberries, and you’ll be in heaven in no time.

Makes 4-6 servings
Ingredients:
1 block silken tofu
1 (3 ½ -ounce) bar 85% dark chocolate, melted*
1 ounce unsweetened chocolate, melted
1 tablespoon maple syrup
1 teaspoon vanilla extract
¼-½ teaspoon salt
Fresh raspberries
Fresh mint
Directions:
Combine tofu, chocolate, maple syrup and vanilla in a blender and process until smooth. Refrigerate for 1-2 hours. Allow to come to room temp for at least 30 minutes prior to serving and top with fresh raspberries and a few mint leaves.
*To melt chocolate, either make a double boiler and melt on the stove top, or microwave in 30-second intervals stirring in between until melted. Allow to cool for 5 minutes before using.
