Bring on your salad game

Would you ever have guessed that this little beauty was just an arrangement of random veggies remaining in my fridge? Not every recipe requires the full tomato let alone an onion, or the whole package of any greens.

What do you do with these excess fresh ingredients? My friends, make a salad!

Would you eat a salad that looks as beautiful as this?!

Umm, YES please!

Not every meal has to be the perfect blend of fat, bitter, sour, sweet and salt…so make do with what you have on hand. It’s not only resourceful but inspires new combinations of flavors that may surprise you…!

my random ingredients

arugula
broccoli stalk
asparagas
cucumbers
tomatoes
red pepper
red onion
banana peppers
avocado
rosemary

Bring on your salad game

  1. Create a base - All I had was a half a handful of arugula and some raw vegetables. I had broccoli stalks (or ends of the crowns) and exactly 5 asparagus. Feel free to get creative with whatever greens you have — not every salad has to be traditional leafy greens. For this salad, I peeled and chopped my broccoli stalks and chopped my asparagus, and then tossed with the little arugula I had left. Exactly the extra crunch I needed!

  2. Toppings - My toppings consisted of 1/2 cucumber, 6 grape tomatoes, 1/8 red pepper, 1/4 red onion and 1/4 avocado. Now this sounds all pretty normal, but did I mention the banana peppers? If you don’t have olives and like a little salt and a little tang, trust me, you need to try theses! Pickled veggies are must in my house they make a perfect small snack and satisfy that salty craving we all have time to time.

  3. Garnish - Decorate your dish with herbs! Rosemary is a woody perennial herb with evergreen-like leaves that are cleansing and anti-inflammatory. (I have a small plant on the deck to grab when I need it.) Don’t forget a little fresh cracked pepper!

  4. Add a bit of protein like some rinsed canned beans or canned fish and you’re ready to rock!
