Gluten-Free Black Bean Brownie Bites: Protein-Packed, Dairy-Free & School-Friendly Treats

These bites take a classic treat and give it a high-protein twist using fiber- and protein-rich black beans. The cakey texture mimics traditional brownies, but without the gluten—making them perfect for anyone looking for a nutritious indulgence.
I always aim to create dishes that not only satisfy your taste buds but also support a healthy, balanced lifestyle. If you find beans tend to cause digestive discomfort, I recommend using Eden Organic black beans. These are pressure-cooked with kombu to help ease digestion and reduce phytic acid.

Ingredients
1 (15-ounce) can of black beans, drained and rinsed
3 tablespoons cacao or cocoa powder
½ cup quick oats
¼ - ½ teaspoon salt
⅓ cup pure maple syrup
¼ cup coconut oil
2 teaspoons baking powder
½ cup mini dark chocolate chips
Directions
Preheat oven to 350 F. Prepare a mini muffin tin with 24 cupcake liners.
Combine all ingredients in a food processor and blend well until completely smooth
Use a cookie scoop or spoon to divide the batter equally amongst the muffin cups.
Sprinkle approximately 4-6 mini chocolate chips on each brownie bite and a very modest amount of gold dusting sugar, just to achieve the effect and not for taste.
Bake for 15 minutes. Remove from the oven and let cool for 10 minutes. When cool, ease the brownie bites out gently with a table knife so as not to disturb the chips.
