Banana Blueberry Protein Muffins: A Low-Sugar, Kid-Friendly Breakfast + Snack Idea
I came up with this recipe when I was looking to mix up my weekend breakfast bowl which usually consists of banana bread, greek yogurt, blueberries and banana - with an egg on the side.
I love experimenting with baked goods to find lower sugar, higher protein options, especially since these double as a kid-friendly snack.
This is a riff off of @bewellbykelly recipe from a few years ago, and it worked really well!
Note that while these use greek yogurt and protein powder, by no means are they “high protein” - each has about 7g. That’s why I combine mine in a bowl with Greek yogurt and have an egg on the side to get to that 30g minimum at breakfast!

Wet ingredients:
¼ cup Greek yogurt (I used @stonyfield fat free)
⅓ cup unsweetened almond milk
2 very ripe bananas
2 eggs
1 teaspoon apple cider vinegar
1 tablespoon vanilla extract
Dry ingredients:
2 cups almond flour
1 scoop @bewellbykelly chocho bean protein powder (I used unflavored but vanilla would be great too and perhaps make them a touch sweeter)
⅔ cup arrowroot flour
1/2 teaspoon salt
1 teaspoon baking soda
dash of cinnamon
1 ½ cup blueberries
Directions
Preheat oven to 350 F.
Combine the dry ingredients in a large bowl. Blend the wet ingredients in a blender and then mix together in the bowl with the dry. Bake for 25-30 minutes and enjoy!
