Back-to-School Boost: Kid-Friendly Mini Pecan Chocolate Pies for a Healthy Dessert

Ingredients


Base

1 cup pecans

1 cup cashews

⅔ cup pitted dates, soaked in 2 tablespoons warm water

2 tablespoons virgin coconut oil



Filling

1 cup pecans

3 tablespoons maple syrup

½ cup pitted dates

¾ cup + 1 tablespoon coconut cream

2 tablespoons raw cacao powder

2 tablespoons coconut oil

4 squares 85% dark chocolate 

Directions

  1. To make the base, blend the pecan and cashew nuts until they reach a rough flour-like consistency. Add the soaked dates (and any remaining liquid), and coconut oil and blend until it reaches a uniform consistency.

  2. Put 8 paper cupcake holders into the cups of a mini muffin tray and divide the base mixture evenly between them. Press and spread it into the cases. 

  3. To make the filling, blend the pecans to a smooth paste, almost like a nut butter. Add the maple syrup, blend for 30 seconds, then add the rest of the ingredients, except the chocolate and blend until smooth, about 2-3 minutes. 

  4. Divide the filling between the mini pies, spreading evenly. Grate the chocolate over the pies and place a pecan on top.

  5. Leave in the fridge for 2 hours to set and harden before serving.
