Black Bean Hummus

Isn’t this picture just divine? My sister, Maggie made it while my family and I devoured it. It sure was tasty!

Ingredients:

2 16 oz cans black beans

8 cloves of garlic, minced

1/2 of one lemon, juiced

1/4 cup of EVOO

2 tbsps black tahini paste

1 tsp cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (or omit if you don’t want spicy)

1/2 tsp, or to taste of salt and pepper

Finish with 2 tbsp of Za’atar, Kalamato olives and fresh parsley

Directions:

1. Rinse black beans and dry out.

2. Mince garlic, lemon juice, and tahini paste, separately.

3. Add black beans with spices including cumin, smoked paprika, cayenne pepper and salt and pepper to taste.

4. Finish with Za’atar, Kalamato olives and fresh parsley.
