Superfood Nut-Free Granola
Tigernuts are a great alternative for those who want a fiber-rich, nutrient-dense grain-free, nut-free alternative. Buying them whole is tough, because you have to soak them in order to eat. After all, they are little tubers…and that requires a bit of chewing action.
But - voila - you can buy sliced tigernuts, and they have the consistency of rolled oats! Try them as a substitute the next time you make cookies as a healthy alternative that packs a bit more balance in the form of fiber, fat, and protein all in one package.

Combined with hemp seeds which are rich in omega-3-rich fats and some delicious anti-oxidant flavonoids from low-in-sugar cacao nibs, and you’re in business for a healthy pep in your step.
Ingredients
1 cup sliced tigernuts
½ cup shredded coconut
½ cup shelled hemp seeds
½ cup collagen peptides
¼ cup cacao nibs
⅛ teaspoon sea salt (optional)
¼ cup avocado oil
2 tablespoons maple syrup
1 teaspoon vanilla extract
Directions
Preheat the oven to 275F. Line a baking sheet with parchment paper.
Place the dry ingredients in a medium bowl and stir to combine.
Combine the avocado oil, maple syrup, and vanilla extract in a small bowl. Stir into dry ingredients and mix thoroughly.
Bake in oven for 50-55 minutes, stirring approximately every 15 minutes, until golden brown. Cool completely over several hours. Store in an airtight container for several weeks.
