One-Pot Spiced Black Beans + Quinoa
I love doing my cooking in one dish. Doesn't it make kitchen cleanup so much easier!?

INGREDIENTS
3-4 cloves of garlic, crushed
1 onion, diced
2 bunches of scallions (about 2 cups chopped)
1 red pepper chopped
2 tablespoons olive oil
1 (14.5 oz) can of coconut milk
1 (29 oz) can of black beans, rinsed
2 teaspoons ground cumin
1 bay leaf
1/4 cup quinoa
Cilantro for serving
DIRECTIONS
Heat oil and sauté all veggies until soft. Add coconut milk and mix in until blended. Add spices and mix.
Add beans and cook for 5 min until warm add quinoa and simmer uncovered for 30 min.
Garnish with cilantro and serve.
