3-Ingredient Cacao Energy Bites

Need a fast snack that’s freezer-friendly and ready in a jiffy?

Well, here you go!

The slight sweetness of cashew butter with the bitter deep flavor of cacao combines to satisfy that chocolate craving that many of us have, but without the ups and downs in our blood sugar that can happen when we have too much sugar or carbohydrate at one time.

Cacao (and dark chocolate, of course!) provide a little bit of natural caffeine that improves stamina, mental function, and mood, making it a great mid-morning or mid-afternoon snack.

Prep Time: 5 minutes

Makes: 12-15 bites

Ingredients

1 cup creamy cashew butter

2 tablespoons cacao powder

1 tablespoon maple syrup

Optional add-ins:

¼ cup chopped cashews or 2 tablespoons cacao nibs (or both!)

Maldon sea salt

Directions

Combine ingredients in a medium bowl and stir to combine. Roll into 1 to 1 ½  tablespoon bite sizes. Store in an airtight container in the fridge for up to a week, or the freezer for up to a month. (Leave on the counter for 15 minutes prior to eating if frozen.)

Enjoy!
