No Bake Yum Yum Bites
These were an instant crowd pleaser in my family, and I hope they get you excited for snack time too!
*I use sliced tiger nuts due to their superior protein content, but you can use rolled oats if you don’t have tiger nuts yet.
The combination of nut butter and coconut along with ground flax gives a surge of fiber that’s sure to keep your digestive system - ahem - going, and your appetite anchored. Choose cacao nibs the next time you think you want chocolate chips because they deliver a higher antioxidant burst of chocolate compared to their sweeter counterparts.
Prep Time 15 minutes
Makes 18 Bites
Ingredients
1 cup tiger nuts*
⅓ cup shredded coconut
¼ cup ground flax
¼ cup dried blueberries
1 tablespoon chia
3 tablespoons cacao nibs
⅛ teaspoon salt
½ cup runny nut butter
3 tablespoons local honey
1 teaspoon vanilla
Directions
Mix dry and wet ingredients separately. Then stir wet ingredients into dry, mix well, and press into golf ball-sized bites. (If your bites don’t stick together well, add a little more nut butter - that will do the trick!)
