Green Goddess Dressing

This plant-based spin on the classic creamy, herby dressing is a keeper for sure, especially in the spring and summer months when fresh herbs abound.

This dressing is a detoxifying mix of parsley, tarragon, chives, and lemon which makes it extra great for when you’re feeling the intensity of summer heat in your body or retaining a little bloat. In fact, parsley is one of my favorite herbs because it naturally debloats!

1 serving = 2 tablespoons dressing

Ingredients

1 cup full-fat coconut yogurt

1 cup fresh parsley

½ cup fresh tarragon

½ cup fresh chives

Juice and zest of 1 medium lemon

3 tablespoons capers

1 tablespoon caper juice

1 tablespoon extra-virgin olive oil (or more if you like a thinner dressing)

2 cloves garlic

Salt + pepper to taste

Directions

Combine ingredients in a blender and blend until smooth. Best used within a couple of days.
