Nutritious and Delicious: Roasted Eggplant with Miso Glaze

INGREDIENTS

1 large or 2 medium-sized eggplants

Extra virgin olive oil (EVOO)

1/4 cup white miso

1 tablespoon grated ginger

1 teaspoon sesame oil

2 tablespoons honey

2 teaspoons rice vinegar

1 teaspoon chili paste (Thai green or red)

2 tablespoons toasted sesame seeds

2-4 tablespoons water

DIRECTIONS

  1. Preheat your oven to 425°F (220°C).

  2. Slice the eggplant(s) into 1/2 inch rounds and place them on a greased roasting pan.

  3. Brush the eggplant slices with 2-3 tablespoons of EVOO.

  4. Roast the eggplant slices in the preheated oven for 10 minutes, then flip them over and roast for an additional 10 minutes.

  5. While the eggplant is roasting, prepare the miso glaze:

    • In a bowl, whisk together the white miso, grated ginger, sesame oil, honey, rice vinegar, chili paste, toasted sesame seeds, and water.

    • Thin the sauce with more water as needed to achieve a spreadable consistency.

  6. After the initial roasting, brush the miso glaze over the eggplant slices.

  7. Broil the glazed eggplant slices for an additional 2-3 minutes until the glaze is bubbly and slightly caramelized.

  8. Serve hot and enjoy!
