Ingredients

1 cup almond flour

2 tablespoons chia 

1 tablespoon poppy seeds

⅛ teaspoon salt

½ teaspoon baking soda

2 large pasture-raised eggs

¼ cup organic Greek yogurt 

3 tablespoons butter or coconut oil, melted

1 tablespoon local honey 

1 teaspoon apple cider vinegar

Zest and juice of one lemon 

Directions 

  1. Preheat oven to 350 degrees and line a small loaf pan with parchment paper.

  2. Combine dry ingredients in a bowl and set aside.

  3. Whisk together wet ingredients in a larger bowl. Add dry ingredients and mix until well-combined. 

  4. Bake for 20-25 minutes, just until a toothpick comes out mostly clean.
